A Hearty One-Pot Chili Your Whole Family Will Love

An adaptable, comforting dinner for a busy night.

A Hearty One-Pot Chili Your Whole Family Will Love

One-pot chili is forgiving: it welcomes whatever vegetables and beans you have available, and the leftovers can become tomorrow's lunch.

For about six servings, brown one pound of ground turkey or beef in a large pot, or skip the meat and add an extra can of beans. Add one chopped onion and a diced bell pepper; cook until softened. Stir in two minced garlic cloves, two tablespoons of chili powder, one teaspoon of cumin and a pinch of smoked paprika.

Add two 15-ounce cans of drained beans, one 28-ounce can of crushed tomatoes and about a cup of broth. Bring to a gentle simmer for 25 to 30 minutes, stirring occasionally. Add broth if it becomes too thick, and taste before adding salt. Cook ground meat thoroughly to its safe internal temperature.

Set out optional toppings such as grated cheese, scallions, yogurt or avocado. Serve with rice, baked potatoes or cornbread. Refrigerate leftovers promptly. A flexible recipe is especially useful when the evening doesn't go to plan.
