One of the things our family loves most about traveling is experiencing different cultures through their food.
From Greece to Spain, Portugal, Japan, and beyond, we've discovered that some of the best memories are made around a table.
Today, we're bringing a little Mediterranean inspiration into our own kitchen!
This Greek-inspired lemon chicken is bursting with fresh garlic, oregano, juicy tomatoes, tender potatoes, and creamy feta cheese.
It's colorful, delicious, and simple enough for a busy family Sunday.
Ingredients
For the chicken and vegetables:
- 6 bone-in chicken thighs
- 1½ pounds baby potatoes, halved
- 1 pint cherry tomatoes
- 1 small red onion, sliced into wedges
- ½ cup Kalamata olives, pitted
- ½ cup crumbled feta cheese
- Fresh parsley for garnish
For the Mediterranean marinade:
- ¼ cup extra virgin olive oil
- Juice of 2 lemons
- 4 garlic cloves, minced
- 2 teaspoons dried oregano
- 1 teaspoon smoked paprika
- ½ teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat: Set your oven to 425°F.
- Make the marinade: Whisk together olive oil, lemon juice, garlic, oregano, paprika, thyme, salt, and pepper.
- Prepare the pan: Toss the potatoes and onion with about half the marinade. Spread them on a large rimmed baking sheet and roast for 15 minutes.
- Add the chicken: Coat the chicken with the remaining marinade and place it among the potatoes. Roast for 20 minutes.
- Add the Mediterranean flavors: Scatter the cherry tomatoes and olives around the chicken. Continue roasting for approximately 15–25 minutes, until the chicken reaches an internal temperature of at least 165°F and the potatoes are tender.
- Finish: Sprinkle with feta cheese and fresh parsley. Add a squeeze of fresh lemon before serving.
Family tip: Serve with warm pita bread, cucumber salad, or a spoonful of tzatziki sauce. Keep the olives and feta on the side for little ones who prefer simpler flavors.
Bringing the World to Our Table
We believe children learn so much when they experience different cultures, traditions, and foods.
You don't have to travel thousands of miles to introduce your family to something new.
Sometimes all it takes is a different recipe, a little curiosity, and a willingness to try something outside your usual routine.
So tonight, we're bringing a little taste of the Mediterranean to our Sunday dinner table.
Have you ever visited Greece, or is it on your travel wish list? What's your favorite Mediterranean dish?
